Saddle stool vs wobble stool vs flat stool
A saddle changes your hip angle by shape. A wobble stool changes your position by removing stability. A flat stool just holds you up - which is sometimes the right answer.

What we did and did not do
Units we claim to have tested: 0. Everyone in this category says they tested twenty chairs. We have not sat in any of these, and we say so.
What we did instead: compiled every figure each manufacturer publishes, computed the fit ranges from a cited anthropometric table, and linked the source for each number so you can check the arithmetic. Where a manufacturer does not publish a figure, we say that rather than filling the gap. The full method, including what we cannot assess, is here.
Three shapes, three completely different mechanisms. The word "stool" is doing a lot of work here.
- A saddle stool works by geometry. You straddle a shaped seat, your thighs drop away either side, and your pelvis rotates forward into something close to its standing position. The effect is structural and does not depend on you doing anything.
- A wobble stool works by instability. The base is domed or counter-balanced, so holding level is a continuous small task and you keep shifting. The seat itself is usually an ordinary flat pad.
- A flat stool works by being a stool. No geometry, no instability - it holds you at a height. Which, if what you want is somewhere to perch between standing sessions, is exactly sufficient.

Choosing by what you want to change
You want a better hip angle: saddle
If the reason you are shopping is that your lower back flattens when you sit, a saddle addresses that directly and passively. A wobble stool does not - the seat is flat, so your pelvis does whatever it would do on any flat seat, just more variably. Saddle roundup.
You want to stop sitting still: wobble
If the problem is four unbroken hours in one position, instability is the mechanism aimed at it. A saddle does not move; it holds a good position. Note that a wobble stool is also the one of the three that publishes the most capacity headroom in this field. Wobble roundup.
You want to perch at a standing desk: flat
This is where the arithmetic decides it. A 42-inch desk needs a seat around 30.6 to 34.5 inches. Flat perch stools reach 34.6; wobble stools reach 33; saddles top out at 30.4. If your desk is tall, the field narrows fast. Standing-desk stool roundup and the height arithmetic.
What about a regular kitchen stool?
Legitimate question, and the answer is more interesting than "no".
On height, a bar stool is often right. A US bar stool is typically 28 to 32 inches, which is exactly what a 38 to 42 inch desk needs. If height were the only variable, a $60 bar stool would be a reasonable buy.
What you lose is every adjustment. No height change, so it fits one desk. No tilt, so the seat is flat and square rather than angled for perching. No swivel, so you twist your spine to reach sideways. And usually a footrest ring at a fixed height, which either suits your legs or does not.
So: fine as a stopgap at a fixed-height desk, poor as a working seat. The adjustments are the product.

One thing all three share
Your feet. Above roughly 26 inches of seat height your feet stop reaching the floor, and at that point all three shapes have the same problem: your weight lands on the front of the seat and the underside of your thighs.
The fix is a footrest ring that moves with the seat. Exactly one product across all three fields publishes one, which is the strongest argument for looking at a drafting chair instead if you are going to be above 28 inches for hours at a time. A separate under-desk footrest does not solve it - most top out around 6.5 inches, which is nowhere near the gap at perching height.
